Thanksgiving Breakfast

These pancake recipes will be showing up again for breakfast Christmas Eve morning.  We served the pumpkin pancakes with maple syrup and the gingerbread with lemon syrup.  Huge hit with the kids and the adults.

Pumpkin Pancakes

2 eggs
1 1/2 cups oat flour
1 tbs + 1 tsp baking powder
1/4 cup oil
1/4 tsp salt
2 tbs sugar
1 1/2 cups milk
1/2 tsp xanthan gum
1/4 tsp vanilla extract
1/2 cup pumpkin puree
1 tsp allspice
1 tsp cinnamon
1/2 tsp ginger

Place all the ingredients in a medium-size bowl.  Mix very well.  The batter will thicken a bit as it is mixed.  Heat a pan or griddle to medium heat.  Cook until small bubbles appear on the surface and the bottom is slightly browned.  Flip and continue to cook until lightly browned on both sides.


Gingerbread Pancakes


2 eggs
1 1/2 cups oat flour
1 tbs + 1 tsp baking powder
1/4 cup oil
1/4 tsp salt
2 tbs sugar
1 1/2 cups milk
1/2 tsp xanthan gum
1/4 tsp vanilla extract
1 tsp cinnamon
1/2 tsp ground ginger
1/4 molasses

Lemon Syrup

1/2 cup sugar
1 tbs cornstarch
1/8 tsp nutmeg
1 cup water
2 tbs butter
1/2 tsp lemon zest
2 tbs lemon juice

Cook cornstarch, sugar, nutmeg, and water until thick and bubbly.  Stir for an additional 2 minutes and then remove from heat.  Add remaining ingredients and stir well until butter melts.  Serve warm.

  1. I was told not to eat oat's so is oat flour the same thing?

  2. When purchasing oats you MUST look for oats that have been certified gluten free. Oats can cross pollinate and be contaminated during transport but are naturally gluten free. I use Bob's Red Mill Oat Flour and have made my own oat flour using Bob's Red Mill GF Oats (used the food processor). The key is to be super dedicated to label reading. Oats are one of those things I never purchase unless it has a certified gluten free label and I know it has been tested. Hope that helps! ~ Jenni

  4. Is pumpkin puree just plain pumpkin can that I would use to make pie?

  5. Lois ~ Yes, pumpkin puree is plain canned pumpkin you would but for a pie. Make sure you aren't buying pumpkin pie mix as it already has sugar and spices added.
