Quick Lunch

OK, we're officially a week into our new Gluten Free lifestyle and so far we're hanging in there. One thing I find I miss is being able to slap together a PB&J for lunch and keep moving. Today I was in a little bit of a funk but then decided to have fun throwing something together and just seeing what happened.

Today's Lunch:

I spread 40 spice hummus on two corn tortillas put roast beef on them and put them together like a sandwich. Delicious! Next time I think I may add a slice of tomato or avocado... maybe both!

  1. Sounds yummy!!!! I sometimes do quesadila's. If I have left over roasted chicken. I shred the chicken, spread some salsa on a corn tortilla, add the chicken, top with vegan cheese. I warm them first in the oven to melt the cheese. Then top with another corn tortilla, and place in a skillet just for a few seconds. Add as a side better than sour cream by Tofutti, a little more salsa, and a slice of avocado. Yummy good and only takes about 10 minutes to whip together a nice warm meal. Not only gluten free, but dairy free as well.
